My family’s absolute favourite dinner is meatloaf and red cabbage.  It’s affordable and delicious! I cook it for them all the time and they love it. My boys prefer it with a hearty side of mashed potatoes prepared with my secret ingredient: love.

Mother’s Meatloaf

Ingredients

  • ½ cup evaporated milk
  • 2 slices bread
  • 1 small onion, chopped
  • Salt and pepper
  • 1 pound ground beef

Directions

In a large bowl, pour milk over bread.  Let stand until the milk is absorbed.  Add onion, salt, and pepper.  Stir with fork until bread softens and is light and fluffy.  Mix in ground beef.  Shape into a loaf in a shallow baking dish.  Bake at 350°F for 50 minutes or until no pink remains.

 

The Old Man’s Favourite Red Cabbage

Ingredients

  • 1 head red cabbage (about 1 pound), shredded
  • 1 medium apple, unpeeled, cored, shredded
  • 1 small potato, peeled, cored, shredded
  • 1 small onion, chopped
  • 1 cup water
  • 3 tablespoons brown sugar
  • 1 tablespoon vinegar

Directions

In a large, covered skillet, cook cabbage, apple, potato, and onion in water over low heat for 15 minutes.  Stir occasionally.  Add remaining ingredients.  Cover and cook over low heat 10 minutes longer until vegetables are tender and the mixture slightly thickens.  Stir often.
